Homemade Cookie Butter Chunk 'n Swirl, and Coffee Chocolate ...

It's August 2nd, and you know what that means--ice cream sammies for all!
If you have no idea in holy horseshoes what I'm talking about, you'll be glad to hear that today is National Ice Cream Sandwich Day! Of course, if you:

a) Are not a silly American who likes to make up excuses to eat sweet things for 1/12th of the entire year,
b) Don't have ice cream sandwiches at home, or
c) Love that Mickey Mouse ice cream scoop as much as I do, but don't own one,

...then you should still celebrate anyway. Sure, technically August is National Eat Dessert First Month, but I've officially declared this month a dessert free-for-all. Hope you'll eat your way through ice cream mountains and cake caverns with us in style!


Also, I definitely bent the rules on this themed entry--these are far from your ordinary ice cream sandwich. These are, in fact, ice cream "sammy" bon-bons--chocolate-dense shells, two layers of sweet graham cracker crust, and a rich coffee chocolate or an amazing cookie butter chunk 'n swirl ice cream. (If that sounds intriguing--it is. The gals at the book club nearly swooned when they tried it.)

Cookie butter, for those of you guys who have not yet tried it, been exposed to it, and/or bought into it, is like the holiday season in a jar. Imagine decimated gingerbread men being crushed into a smooth, creamy nut butter-esque texture, and sticking an entire spoonful of that into your mouth with every bite of this ice cream recipe. Yeah. You need to try some.
